Plant Based Cooking Series

On Saturday, November 14th, Chef Morisette hosted the new COG’s first free cooking class for 16 eager students. With Thanksgiving just around the corner, what a better time for Zags to showcase their new culinary prowess at home. Learn more about how you can cook beyond ramen here. Simple Servings

Simple Servings - With Simple Servings, students avoid food allergy or other dietary concerns without feeling singled out. They no longer have to go off campus for their meals or miss out on dining with their friends while waiting for the chef to specially prepared their meals. All foods offered at the Simple Serving station are naturally free of milk, eggs, wheat, soy, shellfish, peanuts, tree nuts and gluten. Straightforward preparation techniques assure transparency of ingredients, and help student prepare to be responsible for their own shopping and cooking in future.  The lunch and dinner menu change daily and include varied protein options: fish, beef, pork, chicken and turkey.  All side dishes are vegan, containing no milk, eggs, or meat products. Mindful Offering

Mindful offerings meet stringent nutritional criteria based on the Dietary Guidelines for Americans. Each meal part is limited in calories, has fewer than 30% of calories as fat, fewer than 10 % of calories as saturated fat, and is restricted in sodium, and cholesterol. Chefs in our test kitchen develop recipes to meet these criteria in delicious fashion! Look for the Mindful icon to indulge in the healthy and delicious items offered at each meal.

From recipes that include the most nutritious mix of ingredients to offering educational resources for positive lifestyle habits, healthy options are the result of a team dedicated to advancing the well-being of the entire campus community.

Another important part of our focus on health and wellness is the use of seasonal menus, featuring fresh and healthy ingredients - many of which are grown by local or regional farmers. Every season has its own unique produce that is showcased in delicious signature dishes to highlight the distinct flavors and natural appeal of seasonal items.

For students who have special dietary and nutritional needs we have informational resources and customized menus to address your needs. These menus meet the strictest compliance standards, without sacrificing flavor, texture or presentation.
